Orange & Blueberry make the perfect couple <3

Every few months we make feeble attempts to even out the Tim Tams and the Bacardi binges with some healthier options. So get your mums wooden spoon ready for an original R&H recipe…This bad boy makes 12 large and largely orgasmic muffins. Believe.

  • 1 cup Oatmeal (I used my untoasted breakfast muesli. The added sultanas and bran was a nice touch)
  • 1 cup freshly squeezed OJ
  • 3 cups wholemeal plain flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup of raw sugar
  • 1/2 cup honey
  • 1/2 cup of vegetable oil
  • 1/2 cup no fat milk
  • 3 eggs beaten
  • 1 1/2 cup frozen blueberries
  • 1 Tablespoon of grated orange peel
  • 1 cup chopped walnuts
  • cinnamon

Combine oatmeal and orange juice. Set aside. In a large mixing bowl, combine flour, baking powder, salt, walnuts, baking soda and sugar. Make a well in the centre of the dry ingredients, add oatmeal mixture, oil, milk and eggs. Stir only until ingredients are moistened. Gently stir in honey. Carefully fold in berries and orange peel. Spoon into greased muffin tins. Sprinkle with a teeny bit of sugar and cinnamon and slide into that oven at a standard 180 degrees for 15 – 20 minutes and serve ’em warm. Trust me.
